Vidalia Onion & Tomato Gratin
Slice 1-lb garden-ripe tomatoes and layer in oiled gratin dish. Salt and pepper to taste. Mix one 6-oz jar pesto, 1/3-cup grated Parmesan cheese and 1/4-cup breadcrumbs. Spoon over tomatoes. Top with 1-tbsp fresh thyme. Bake 350-degrees for 30-35 minutes.
